I didn't have a whole lot of free time this weekend but I still managed to squeeze in a little bit of meal preparation. Even a small amount of preparation can make the coming week easier. When you think of food preparation you might think of spending hours in the kitchen putting together meals for every single day, but that doesn't really work for me. I like to make fresh food everyday! But if I'm in a rush, or just feeling lazy, I like to have some healthy options that I can grab and go. I spent less than an hour preparing food (even though I didn't feel like it!) but I know I'll thank myself later!
What I prepped this week:
- 2 spinach salads with brown rice, chickpeas, cucumber, carrot, and tomato
- washed and cut up fruits and vegetables (watermelon, 3 oranges, cucumber, and carrots)
- 2 batches of unsweetened iced green tea, 1 with lemon and 1 without
- divided a bag of almonds into ¼ cup portions
- cooked a big pot of lentils and brown rice (not pictured)

I see that you portion your meals out weekly, thats awesome! I am trying to learn how to do the same thing. But in your pictures, is this food prep for all week or one day?? If that makes any sense?

I don't prep food for the whole week, or even a whole day! I just like to do up a couple of things to get my week started off right. Usually I just prepare some healthy snacks, and maybe some different foods that I can mix and match to help make meals with at the beginning of the week. I don't like to spend a lot of time doing food preparation but the little bit that I do definitely makes a big difference!

Hey I was wondering how you make your green tea!?

Hi there! It's super simple! I made two 1 litre jars. I brought a big pot of water to a simmer. In each jar I placed 2 green tea bags, poured the hot water into the jars and then let them sit on the counter until they had cooled down a little bit. After they had cooled I chopped up one washed lemon and added it to one of the jars, and then I put lids on them both and put them in the fridge. I just leave the tea bags in because I don't find that it gets too strong if you only use 2 tea bags for a litre, but you could always take them out if you wanted to!

Thanks! I don't take a B12 supplement, I eat fortified foods such as soy milk and nutritional yeast for B12 🙂
