    Description

    A great savoury breakfast recipe! Serve with whole grain toast and fresh fruit for a simple meal or take it on the go in a breakfast wrap or sandwich.


    Ingredients

    Scale
    • Β½ block firm, extra-firm, or pressed tofu
    • Β½ tbsp olive oil
    • 1 clove garlic, minced
    • 1 tbsp (or more) nutritional yeast
    • β…› tsp (or less) of ground cumin
    • β…› tsp salt

    Instructions

    1. Heat the olive oil over medium-high heat. Use your hands to break the tofu into large chunks. Add the tofu and garlic to the hot oil. Cook, stirring occasionally, until the tofu is golden brown on all or most sides. As the tofu is cooking you can break up larger pieces of tofu with your wooden spoon.
    2. Once the tofu is golden brown, add the nutritional yeast, cumin, and salt. Stir and continue cooking until the tofu absorbs the nutritional yeast.
    3. Serve the scrambled tofu with a side of toast and some fresh fruit, or try one of the serving suggestions below.

    Notes

    Breakfast wrap: Enjoy on the go in a breakfast wrap by folding it into a whole wheat tortilla with sliced avocado or non-dairy cheese, lettuce, and tomato.Breakfast sandwich: Make the scramble according to the directions and serve on a whole wheat English muffin with avocado or non-dairy cheese, lettuce, and tomato

        About 4 days or so. You could definitely prep it at the beginning of the week. If you're concerned about it lasting for those last couple of days, you can freeze some too!

      This will surely sound very stupid, but what is β€œmedium-high” heat? Is it not medium heat on the dial because anything higher than medium makes the oil pop. Is medium-high supposed to be between medium and high? Thanks for your help on this πŸ™‚ I look forward to cooking your recipe! (Just FYI I could only give 4 stars as the highest as well).

      I've been vegetarian for 15 months and vegan the past 9. I've really started relearning to cook. It is my goal to be a much better vegan cook than I ever was in pre V/v days. I tried your vegan tofu scramble recipe this morning. I cooked it exactly as you described with one exception. Every time I have ever cooked tofu, I noticed that it worked better if the salt was added while the tofu was cooking. So, that's what I did. About 1/2 way through cooking the tofu, I added a few spritzes of freshly ground salt. I don't have any idea if this made a difference, but I really enjoyed your recipe. It will be my standard. Thanks for posting/sharing it. By the way, I tried to give it 5 stars but this web site would only allow me to give it 4. Weird. Rainey

      I am a newbie vegan. After watching What the Health...we decided that we were going to go vegan. I do miss eggs though, I am going to try the tofu scramble for breakfast this morning. This is week 2 for us and it is amazing...I thought is was going to be sooo very hard to change...I love the way my joints don't ache and I am feeling better every day.

        Me too Wisteria! I watched what the health and almost threw up. I was almost full Keto diet, I am apalled! So I am trying Vegan too and this does look delicious!!
