    If there's one thing I love about veggie burgers, it would be everything. I love almost everything about veggie burgers. The good ones are delicious (obviously), hearty, messy, ridiculously satisfying and best served with a side of fries (skins on!) If there's a vegan veggie burger on the menu, I am ordering it, end. of. story.

    If there's one thing I don't like about veggie burgers, it's the whole making them from scratch thing. Making veggie burgers isn't difficult, but there's a certain amount of effort required to make sure the ingredients bind together. Very finely chopping the vegetables is the first crucial step to making a veggie patty that won't fall apart but unfortunately, teeny-tiny chopping veggies is both time-consuming and boring.

    In this recipe, I'm focusing on the food processor attachment with the chopping blade to chop all the veggies for my burgers. There's lots of mushrooms, carrot, celery, red onion, and garlic, and I want them all chopped super fine and even. I'm also using it to evenly mash and break open my black beans without turning them into a mash. Easy and super lightning fast!

    Back to these veggie burgers. These patties are made up of mushrooms, black beans, brown rice, bread crumbs, carrots, celery, onion and garlic. Nutritional yeast and soy sauce add a little of that salty burger-y umami flavour. The smashed beans and rice, and bread crumbs help to bind the ingredients and firm everything up, and the addition of ground chia seeds really helps to suck up extra moisture and keep these patties firm. I whizzed the chia seeds in the Puremix blender (which we'll talk more about on another day) using the "crush ice" setting which worked beautifully.

    To bring these delightful patties from mere tastiness to full-blown veggie burger deliciousness I recommend you serve them with a healthy dose of vegan mayo, crisp green leaf lettuce, a slab of tomato, melted vegan cheese, red onion rings, sliced dill pickles, and a squiggle each of ketchup and mustard.     Description

    Classic vegan burgers made with a base of mushrooms, veggies, brown rice, black beans and bread crumbs. Perfect for your summer BBQ!


    Ingredients

    Scale

    Mushroom & Black Bean Patties

    • 1 cup cooked brown rice
    • 1 ⅓ cups canned black beans, mashed
    • 1 tbsp olive oil (plus extra for frying)
    • 6-8 -medium mushrooms (cremini/white button), finely chopped
    • 1 stalk celery , finely chopped
    • 1 small carrot, finely chopped
    • ¼ red onion, finely chopped
    • 2 cloves garlic, finely minced
    • ½ teaspoon salt
    • 1 ½-2 cups bread crumbs
    • 1 tbsp ground chia seeds
    • 2 tablespoons nutritional yeast
    • 2 ½ tablespoons soy sauce
    • squeeze lemon juice

    Burger Toppings

    • buns
    • vegan cheese slices
    • tomato, sliced
    • red onion, sliced
    • dill pickles, sliced
    • green leaf lettuce
    • condiments: vegan mayo, ketchup, mustard

    Instructions

    Mushroom & Black Bean Patties

    1. In a large skillet, heat olive oil over medium-high heat and sauté the finely chopped mushrooms, celery, carrot, onion, and garlic until just tender. Sprinkle with salt and stir.
    2. Add the black beans, brown rice, bread crumbs, ground chia seeds, nutritional yeast, and soy sauce, lemon juice and stir until the mixture gets very thick and difficult to mix. Refrigerate for at least 1 hour.
    3. Portion the burger mixture into ⅓ cup (or slightly larger) patties (21/2" in diameter and ½" thick). You can now refrigerate, freeze, or cook the patties.
    4. Heat a generous amount of oil over medium heat. Fry each patty for 3-5 minutes, flip, top with a slice of cheese (if using) and cover with a lid until the cheese melts. Warm the cut side of the buns while the patty finishes cooking.

    Assembling the burgers

    1. Spread the bottom bun with vegan mayo, top with lettuce, a slice of tomato, the burger patty, pickles, onion, ketchup, mustard, and the top bun. Enjoy!

        I’m a light eater and I ate three of these patties and was still hungry; I could eat one half of a turkey burger and be full, good luck all you vegans, gonna see you hanging over the belt line

      I made these one time so far and the texture great! Very easy to make.
      Might it work to sub oatmeal or oat flour for the breadcrumbs, though? I'm trying to switch to gluten-free.

      This is my go to veggie burger recipe. So many are too bland or too mushy, but this one is perfect. Especially with a generous glug of oil in a cast iron.

      I LOVED the flavor of these burgers, however when following the recipe as written, the texture was a little too dry and crumbly and didn't stay together very well. Next time, I'll add water to the chia seeds to make a chia "egg" and see if that helps it bind better.

      Fantastic recipe! My carnivore husband gave it 10 out of 10! I used miso instead of nutritional yeast, millet instead of rice and replaced half of bread crumbs with ground flax. I also added some chili flakes for some heat. I tripled the recipe and froze the leftover patties for my vegan son's visit on a weekend. Can not wait to surprise him! Thanks for sharing it.

      Amazing. Thank you. I made them for my husband's 50th birthday BBQ celebration at the house. People asked to take the left overs home yesterday. . Just made some more tonight for dinner. I have issueds digesting red meat and really have not found a turkey burger that I like. I totally was not sad that I could. not have a burger. They were so delicious and filled me up. I made another batch tonight for myself. I frozen the left overs. Hope they taste as good when i defrost them.

      I absolutely love these patties!! Not dry or chewy like lots of store bought vegetarian/vegan patties. I’ve not even found one I like as mucn as this recipe in a restaurant!

      TX for the recipe. It looks awesome. I will be trying this tonight. I also appreciate the simple ingredients. I live in South Africa, so sometimes ingredients for recipes are not readily available. I will probably sub the yeast with marmite, but the rest of the ingredients are available in our shops.

      These were great! My husband and I are on Weightwatchers, so I made them with less breadcrumbs, and instead of forming them into patties and frying them in oil, I formed them into balls and baked them in the oven at 375 for 40 minutes, flipping occasionally. Then we ate them in a wrap! Delish!!

      Wow.these are the first vegan patties that bind well, easy to fry, delicious to eat with the perfect amount of umami.

        Yes! They are the binder in this recipe, you can swap 'em out for ground flax seed if you have that on hand!

          I made these. They tasted greatbut they never cooked all the way through. I cooked them in the pan. They only got blackened/browned on the top and bottom. Do they cook all the way through or are they supposed to be soft/squishy?

      Made these tonight for dinner. Substituted brown rice with quinoa (because I already had some made), and used panko for breadcrumbs since I had it on hand. I added one jalapeno for kick. For the most part, they held up in the pan with just a tiny bit of crumbling (it was so good I ate the crumbs!). This will be my new go-to recipe for veggie burgers...by far the best recipe I tried. My husband enjoyed them as well. So good...this is my first review on a recipe 🙂

      I absolutely love these burgers! The consistency is lovely and they're quick and easy. I left out the rice because I was feeling lazy, but it wasn't a problem at all. No crumbling! I could eat these everyday (I actually do).

          I substituted 1 cup of cooked quinoa for the rice and they turned out awesome! Easily the best black bean burger recipe I've tried. And flexible! I left out the celery, substituted 2 tbsp of apple cider vinegar for the lemon and only added 1 1/3 cups of bread crumbs because my 1/3 cup was already dirty 🙂

      Ok wow. I didn't know what to expect when I came to check this out but that looks SPECTACULAR. I've been on a quest lately to find a few really great veggie burger patties, because frankly I'm tired of the ones that fall apart and/or just taste like chopped veggies (veggies are great, but if I wanted chopped veggies on a bun, I'd eat that). The texture on that burger looks AWESOME. Your toppings are wonderful, and I particularly love the stacked gif showing the stages. Wonderful, wonderful job.

      This looks just as good as a "real" burger patty! I've made burgers with chickpeas before but never black beans! I will try this out for sure! ( do they cook alright on a BBQ or would you just pansear

          I tried this recipe out for Father’s Day and the burgers were really good! I am the only vegan in my family and even prior I was never a fan of burgers. I made this just like the recipe and fried in oil and they stayed together just fine but a little soft. I had some extra left over and I air fried the patties the next day and the texture came out a little tougher, more like meat, and stayed together well. I do prefer the air fry method vs grease fry but the taste was great and I intend to make this again soon and again and again!

          These were good, however a lot of prep work; I am a light eater but had three patties and was still not full, wouldn’t make again for all the effort and limited appetite covering, so much for a vegan menu keeping one full
