Description
Fresh Pico de Gallo made quick and easy with a food processor.
Ingredients
- 2 tomatoes
- ½ red onion
- ½ jalapeño, seeds removed
- 2 cloves garlic, minced
- fresh cilantro leaves, to taste
- 1-2 tablespoon canola or olive oil
- 1 tsp sugar (optional)
- salt, to taste
- ½ lime, juiced
Instructions
- In a food processor, pulse tomatoes, onion, jalapeño, and minced garlic until evenly chopped.
- Add cilantro, olive oil, sugar, and salt. Pulse to break up cilantro leaves. Stir in lime juice. Taste and adjust seasoning.
- Refrigerate and let marinate for 30 minutes or more before serving to allow flavours to meld.

I used the processor for the jalapenos cilantro and onions but ended up finely chopping the tomatoes.

This was a bad idea! I like my pico chunky. The food processor liquified my tomatoes. Wasted my time and money. Will go back to chopping tomatoes 👎🏻

I kind of do the same, pulse 3 times it's done. I use one whole jalepeno, half seeds removed, I like the heat. 2 limes and a food processor makes the work take 2 minutes.
