    Vegan Drive-Thru Breakfast Sandwiches

    A few months back I shared that I've fallen back in love with breakfast. To be more specific, super savoury stick-to-your ribs kinda breakfasts - like breakfast sandwiches.

    A few years ago I shared my recipe for a variety of breakfast sandwiches using scrambled tofu. Since then, I only opt for scrambled tofu on my sandwiches if I happen to have leftovers. Otherwise, I am ALL about the tofu patty. Basically, I just double the "scramble" sauce from my Scrambled Tofu Breakfast Bowl (IMO, that recipe is my best rendition of tofu scramble so far) and coat pressed patties of tofu (a 350g block's worth) instead of using crumbled tofu. Fry up the sauced patties, top 'em with a slice of vegan cheddar (we used Earth Island's (Follow Your Heart) Cheddar slices), put a lid on the pan to melt the cheese, and you're ready to assemble!

    Since this particular sandwich was one I made AFTER driving past a few McD's all-day breakfast billboards, I was going for a true drive-thru breakfast experience. With that said, I recommend serving the patties on toasted white English muffins (1 side spread with vegan butter, vegan mayo on the other side) along with some kind of vegan mock meat. We used Yves Veggie Cuisine's vegan turkey for these ones, but we've also used and loved:

    • Tofurky's Smoky Maple Bacon and Hickory Smoked Tofurky Slices
    • Lightlife's Fakin' Bacon (aka Smoky Tempeh Strips in Canada)
    • Yves Veggie Cuisine's Sauage Patties and Links

    Afterwards, wrap 'em up in foil for a minute or 2 (a bit of steam softens the toasted muffin making it like a proper drive-thru sandwich.)

    Lettuce (or spinach), tomato, and sprinkle of black pepper are my other go-to toppings. And sliced, ripe avocado is always welcome to join the party if you have one on hand! What are your favourite breakfast sandwich toppings?

    There's no recipe needed for these guys! Use your favourite English muffins (or bagels), jump over to the Scrambled Tofu Breakfast Bowl post for the scramble sauce (double it for 1 350g block of tofu), and the toppings are up to you! Enjoy!

      Looks delicious! Just a quick question, do you think these would freeze well? I work excess of 10 hours a day M-F and do loads of meal prep on Sunday. When I was a omnivore, I'd freeze some of my breakfasts to keep them from Sunday till Friday. I'm trying to find vegan breakfasts that would still be okay to freeze and keep for a couple days.

      Hey! This recipe looks delicious and I think it is really going to provide a great bridge to help transition my family to a vegan diet. One question! I do a lot of meal prep and unfortunately do not always have the luxury of making this in the mornings..Can this sandwich be stored frozen and then thawed when ready to eat (Almost like those Jimmy Dean breakfast sausage biscuit things) ??

      BRITTANYYY!!!! This sandwich was so freaking GOOD!!! Easy to make, delicious and the macros really are pretty nice! My partner ate two last night for dinner 🙂 He was like "This is VEGAN??!!" It was a proud moment for me, so thanks for that. Hahah!

      My husband joined me in a vegan lifestyle only 2 1/2 weeks ago. I have never been a meat substitute person, ever, but it sure is making it easier for him to survive the transition! This looks like a great breakfast option for him!

      Hurray.... I'm all for vegan and delicious ...a little variety and lots of balance. I tried doing the mostly veggie-green diet, was constantly hungry (and grumpy) and reverted back to old eating habits. Your recipe ideas enhance a person's life without inflicting harm. They're fun and delicious !

      I don't like to be the voice out of the chorus, but after reading a post like this...honestly, what means being VEGan to you?
      I'll tell you what means to me that VEG before the -an comes before anything and it stands for VEGgies. It does not stand for anything that shows in this post except the leaf of lettuce in the sandwich.
      I mean:
      -vegan cheddar
      -vegan mayo
      -vegan butter
      -vegan turkey
      -vegan bacon
      -vegan sausage
      It's all things that are mentioned in this post, I did not make them up.
      I appreciate that no animal was killed to make these but they are processed foods no better than any mc donalds could give you. The only plus is that, yes, no animal was killed, but it's not high quality food and it has very little VEG-an in it, if the bold "veg" is the priority.
      Is the aim of the blog was "wholesome, simple recipes", this post missed the target. It's processed stuff and endless ingredient labels.

        Thanks for commenting Anneliese. Veganism is abstaining from animal products in both diet and lifestyle. For me that means trying to exclude animal cruelty from my lifestyle, as much as possible. Veganism is not healthy eating and it isn't a term to describe someone who eats a ton of vegetables. The purpose of this post was to make a delicious, vegan breakfast sandwich reminiscent of one from a drive-thru, without causing cruelty to animals. I believe that is what I've accomplished here. While this isn't a "wholesome, simple recipe" it is a tasty breakfast that makes a great addition to a balanced vegan diet. I think it's really cool that we live in a time where vegans can still enjoy foods like butter, cheese, sausages and bacon!

          Being vegan is a lifestyle, not a diet. I'm probably the most unhealthy vegan on the planet (something I do plan on changing though lol). I love breakfast sandwiches for dinner, chips, and deep fried food.

        Anneliese is the reason I stopped socializing with other vegans. I was a vegetarian for almost 30 years and got crap for not being a vegan. Finally became one and now I keep getting crap for eating Tofurkey once in a while. Just can't win 🙁

          I totally understand your frustration Dorota! I just try to do what's best for me, and nevermind any holier-than-thou vegans that can't be satisfied. Veganism isn't about winning, there's no "Best Vegan" trophy to win! Screw winning!

          Eating tofurky and vegan mayo makes me feel "normal", makes this lifestyle sustainable, and makes me happy. That's all that matters 🙂 Thanks for commenting Dorota! I hope you find some nice, reasonable vegans to socialize with!

        Can someone please explain what Tofu is, I'm a baby vegan, and need to make absolutely sure as possible that I'm not eating anything that could potentially harm me. ie that's why I don't eat meat anymore, GMO's, processes foods etc...

          Hi Angela! Tofu, or bean curd, is made by coagulating soy milk (which is made by blending soaked soybeans with water), the curds from the coagulated soy milk are pressed into a block. You can read more about the health of tofu and soy here: https://zenhabits.net/soy/ I'm comfortable recommending tofu as a healthy addition to any diet! (Plus it can be downright DELICIOUS when prepared well!)
