    Over the next 2 weeks, I'll be sharing some of my favourite classic Christmas recipes, all veganized. If you've been a reader for quite some time, you might recognize them. That would be because they're reposts of some older recipes that tragically went missing after a theme upgrade last year. Ugh, super frustrating! 😡

    So, here are some of the recipes you can expect coming up to Christmas:

    First up, my favourite vegan Dill Mashed Potatoes! Soft, fluffy, creamy and flavourful, and they go perfectly with heaps of mushroom gravy (coming up next!)

    Description

    Soft, fluffy, and 100% vegan dill mashed potatoes. The perfect side for Thanksgiving or Christmas!


    Ingredients

    Scale
    • 6 medium sized russet potatoes, scrubbed, and quartered
    • ½ cup unsweetened soy milk
    • 1 tbsp + 1 tsp vegan margarine
    • 1 ½ tsp salt
    • 2 tbsp (or more) fresh dill, roughly chopped

    Instructions

    1. In a large pot, cover potatoes with water. Bring to a boil. Boil for 15-20 minutes, or until tender when poked with a fork.
    2. Drain potatoes and mash in a large bowl.
    3. Add soy milk, margarine, salt, and dill. Mash until smooth, or until it they reach your desired consistency. For silkier mashed potatoes add more margarine and/or soy milk.
    4. Taste and adjust the seasoning.
    5. Sprinkle with a pinch of black pepper, and serve with vegan gravy.

    Notes

    For creamier mashed potatoes, add a little more vegan butter and a splash of soy milk. Stir and adjust as needed.For easier mashed potatoes, substitute 2 - 1.5lb bags of The Little Potato Company's Baby Boomer Creamer potatoes. They boil fast and don't require peeling or cleaning!

      Delicious! I've been wanting to make more homemade mashed potatoes, but finding a good vegan recipe has proven hard. I added a bit more salt and then some pepper, but overall this is PERFECT just as is. Never would have thought of dill, but it is such a lovely and light flavor in this. I'll be making this a lot in the future!

      I love Mashed Potatoes and mushroom Combination. I also made so many dishes with this combination But you have added one more in my list thanks for it. It looks creamy and delicious with dollop of butter melting on top and a sprinkle of green onion.

      I like the idea of a little dill in the mashed potatoes. And mushroom gravy - yum! I will have to keep an eye out for that. I was thinking of trying vegan sour cream in mashed potatoes, too.

      I'm all over putting lots of herbs in my mashed potatoes, but have never thought of adding dill! So perfect! Sounds like a great list of Christmas recipes you've got planned....

      Yum! First of all I love that picture with all the dishes together. That just looks wonderful 🙂 That being said your mashed potatoes look and sound fantastic. I have a nephew with a dairy allergy so I know good mashed potatoes don't need dairy 🙂
