    How to Cook a Tofurky Roast

    Tofurky Roasts are a convenient vegan holiday staple. They’re easy to prepare and make a satisfying centerpiece to a vegan Thanksgiving or Christmas meal.

    This Tofurky “how to” guide will help you get the most out of your roast. This post covers how to cook a Tofurky Roast (thawed or frozen), make vegan gravy from the "drippings", serve the roast, and how to heat and use up leftovers.

    How to Cook a Tofurky Roast - updated November 2019.

    What you'll need to prepare a Tofurky roast: uncooked Tofurky roast, chopped vegetables, baste, and fresh herbs.


    What You'll Need

    • 1 Tofurky Roast, thawed in fridge for 24 hours

    If needed, refer to the Tofurky tips below to cook from frozen.

    For the Baste:

    • 3 tablespoons (45 ml) olive oil
    • 2 tablespoons (30 ml) soy sauce
    • 1 tablespoon (15 ml) maple syrup
    • 1 clove garlic, minced
    • 1½ teaspoons each of fresh chopped thyme, oregano, sage, and rosemary (for dried herbs, use ½ teaspoon each or sub with 2 teaspoons dried poultry or Italian seasoning - rubbed not ground)

    Vegetables (optional):

    • 1 medium sweet potato, peeled and chopped
    • 1-2 carrots, peeled and chopped
    • 6-10 Creamer potatoes, halved

    When chopping the vegetables, keep the pieces in large and uniform pieces as they're going to cook for over an hour.

    Other vegetable options: onion, parsnips, large broccoli florets, halved Brussels sprouts.

    For the Gravy (optional):

    • Tofurky “drippings”
    • 3 tablespoons (35 grams) flour
    • 2 cups (500 ml) vegetable broth

    Other Supplies:

    • Scissors or sharp knife
    • Parchment paper
    • Casserole dish, roasting pan, or pie plate
    • Aluminum foil

    How to Cook a Tofurky Roast

    Preheat your oven to 350°F (180°C).

    Use a knife or scissors to carefully cut off one of the end clips. Run the thawed Tofurky Roast under warm water as you loosen and remove the plastic.

    Prepare the baste in a small bowl. Mix together olive oil, soy sauce, maple syrup, minced garlic, and herbs.

    If cooking vegetables, toss them with 3 tablespoons of baste. Arrange vegetables in your baking dish.

    Preparing a Tofurky roast for basting and baking.

    Put a piece of parchment paper in the center of your baking dish. Add the Tofurky Roast and cover with half of the baste.

    Note: When cooking vegetables in the same dish as the Tofurky, the parchment paper barrier prevents the vegetables from simmering in the excess baste, getting overcooking and over-seasoned. The parchment makes it easier to reserve the Tofurky "drippings" for making vegan gravy.

    Cover the baking dish tightly with aluminum foil.

    Cook for 1 hour and 20 minutes. Check for doneness after 1 hour. Once the vegetables are almost tender and the Tofurky is golden-brown, pour the remaining baste over the Tofurky and cook, uncovered, for another 10-15 minutes. Cook until the vegetables are tender and the Tofurky Roast reaches an internal temperature of 165°F (75°C).

    Optional: Reserve excess baste or Tofurky "drippings" for making vegan gravy.

    Use a very sharp or serrated knife to thinly slice/shave the Tofurky Roast for serving.

    Store leftovers in the refrigerator for up to 4-5 days.


    How to Make Tofurky "Dripping" Gravy

    Heat the Tofurky “drippings” in a small saucepan over medium heat. Once hot, make a roux by whisking in 3 tablespoons of flour. Add a splash of the vegetable broth if the roux is too thick to stir. Cook, stirring constantly for 1-2 minutes. Whisk in the vegetable broth, slowly and gradually, to prevent lumps. Simmer until the gravy reaches your desired consistency. (The gravy will thicken slightly as it cools.) Taste and adjust the consistency with vegetable broth or water. Taste and adjust seasoning with salt and pepper.

    (Tip: Add minced roasted onions or mushrooms.)


    Tofurky Tips

    Cooking from Frozen

    Extend cook time by 1 extra hour. If cooking vegetables in the same baking dish, cook the Tofurky Roast for 1 hour before adding the vegetables and continue cooking as directed.

    Reheating leftovers (Microwave): Sliced Tofurky can dry out quickly. Mix Tofurky slices with a small amount of vegan gravy or water to moisten slightly. Cover loosely before microwaving until heated through.

    Reheating leftovers (Oven): Preheat oven to 350°F (180°C). Wrap sliced Tofurky in foil and add a small amount of vegan gravy or water to moisten slightly. Cook until warmed through, about 10 minutes.

    How to Use up Tofurky Leftovers

    • Make Tofurky sandwiches with leftover dinner buns, cranberry sauce, gravy.
    • Use up leftover Tofurky, mashed potatoes, gravy, and roasted vegetables to make Vegan Holiday Shepherd’s Pie.
    • Substitute the tofu with leftover Tofurky in Vegan Pot Pies (with flaky pastry crust).

      Taste and adjust the consistency and seasoning using vegetable broth, water, salt, and pepper.

    Notes

    Store leftovers in the refrigerator for up to 4-5 days.

      Your recipes are more creative and easier to follow. I take a Tofurkey with me to any Thanksgiving-Native American Celebration. When I offer a taste to guests they say " Uh, no thanks" or "Maybe later, that looks interesting" and of course "Don't you miss the taste of real meat?" Folks are extremely rigid in their food habits. Works out ok in that I end up with more leftovers!

      Terrible. 2-3 times too much salt than bearable, wild rice is lackluster; overall bland & disappointing.

      I'm determined to cook a delicious turkey this year for Thanksgiving. The last couple I made turned out real dry and tough. I don't know why I've had such a difficult time of it. I've got a good feeling about this one.

      Hi. I accidently put stuffed trader joes tofu roast in refrigerator for 60 hours upon first buying Once i realized what i had done, i put in freezer. I will be cooking this is one week. Is it safe to eat now? Should i thaw and then cook (per directions on box) or keep frozen until put in oven to cook?

      I'm so addicted to your marinade for Tofurky. I've been vegetarian for 4 years, and I'm pretty new to Tofurky. My first couple of Thanksgivings, I don't remember what I ate, but it wasn't turkey or Tofurky. I tried Tofurky last year for the first time, and I can honestly say that your recipe makes me not miss turkey anymore. I love this so much, I've stocked up so that I have enough tofurky for Thanksgiving, Christmas, and the rest of the year.

      We tried this yesterday and followed the instructions to a T, and it tasted like rubber, we ended up throwing it in the garbage, I watched Fox news and they had it on their program to try it and Juan said it tasted like rubber, I agree!
      What a waste of money, not sure why others brag about this, will stick with my lentil loaf from now on or other recipes that is made from scratch.

      Ban the tofurkey roast be cooked in an air fryer? I have the 1 lb. 10 oz defrosted roast and it looks like it will fit perfectly in my AF pan. What temp? The basting liquid sounds good.

        Hmmm... I haven't used an air fryer before so I'm not 100% sure. Do you have an internal thermometer? Using one would be extremely helpful. From what I've found, in a regular oven at 350°F, a Tofurky roast takes about the same time to cook as a Turkey breast. Based on that, I'd look at recipes for cooking a turkey breast in an air fryer. So, baste and cook at 325-350°F for 20 minutes. Baste again and cook until the internal temperature reaches 160°F, which might be around 20-40 more minutes. Again, I've never actually cooked a Tofurky roast in an air fryer but that's where I'd start. If you do try cooking the roast in an air fryer I'd love to hear how it turns out!         You can prepare a Tofurky in a crock pot, but I haven't tried it myself, so I'm not totally sure how you'd need to change this recipe. I can tell you what I'd try as a first attempt though.

        Since the vegetables finish cooking at the same time as the roast in the oven, I'd go with a similar setting/timing as you would for cooking vegetables in your crock pot. From what I can see that's something like 2-4 hours on high heat or 6-8 hours on low heat. If you're feeling adventurous and you want to give it a try I'd add a 1/2 cup of vegetable broth to the baste (and if you're not making the gravy afterwards, reduce the oil by 1 tbsp). Pour all of the baste mixture over the Tofurky at the start. I'd try slow cooking on high for 2 hours to start, basting the Tofurky with the cooking liquid every 30 minutes or so. If you're cooking on low you could baste less often. During the cooking time, if needed, add more vegetable broth. You'd need to play with the cooking time, checking for doneness when you're basting. If you have an internal thermometer that would really help!

        I'll have to try slow cooking it myself so I can add the method to the post. Thanks for the great question, I wish I had a tried and true answer for you. You could always try googling a slow cooker Tofurky recipe from someone that's actually tested the method too 😛

      I am making a tofurky for my very picky granddaughter who has celiac and feels better eating vegan. Can I make it without the veggies—they are all being cooked separately.?

        I might be misinterpreting your comment, but just in case I'm not you should know that Tofurky roasts are NOT gluten-free! The first ingredient is wheat gluten. But yes, you can cook Tofurky without the vegetables. I usually cook it in a loaf pan when I prepare it without veggies.

        You could certainly try it, but I wouldn't recommend it. Leftover tofurky makes for great sandwiches!

      At 350 the Tofurkey never got to the minimum internal temperature of 165F/75C. I thawed it for almost 36 hours. Should I be worried?

        That's strange! Perhaps your oven temperature is off? The roast is fully cooked so you don't need to worry about it like you would meat. Just serve it hot!

      How do you keep it warm before serving time if it's done cooking. Can you just leave it out? Will people be unhappy with aukewarm tofurky?

        I usually arrange the cooking times of each food so that I serve everything just as the the Tofurky is coming out of the oven. Things like mashed potatoes, gravy, and cranberry sauce, can easily be reheated. If you do need to keep a cooked roast warm before carving and serving just cover with foil and keep it in your oven (set to the lowest heat setting.)

        Yes! You'll need to cook the roast for an additional hour, so I'd do everything as directed but wait 1 hour before adding the veggies so they don't overcook.

      Tofurkey has been a holiday staple in our vegetarian home since it first showed up in specialty markets over 20 years ago. My now adult kids, two of which are no longer vegetarian, can't wait for Tofurkey to show up at Thanksgiving and Christmas. Sometimes I will even make a Tofurkey dinner in the middle of the summer. I make 3 at once, often cutting the thawed Tofurkey in half lengthwise and basting it with a combo of olive oil, soy sauce, red wine and fresh herbs. Cover well (I use a turkey roasting pan and cover). Baste halfway through cooking. Cut in half in quarters to serve as meal-sized portions or slice thinly with a very sharp knife (I use an electric knife).
